Gluten Sensitivity: One Cause, Many Diseases

 

A review paper in The New England Journal of Medicine listed 55 “diseases” that can be caused by eating gluten. (iv) These include osteoporosis, irritable bowel disease, inflammatory bowel disease, anemia,cancerfatigue, canker sores, (v) and rheumatoid arthritis, lupus, multiple sclerosis, and almost all otherautoimmune diseases. Gluten is also linked to many psychiatric (vi) and neurological diseases, includinganxietydepression, (vii) schizophrenia, (viiidementia, (ixmigraines, epilepsy, and neuropathy (nerve damage). (x) It has also been linked to autism.(ix)

We used to think that gluten problems or celiac disease were confined to children who had diarrhea, weight loss, and failure to thrive. Now we know you can be old, fat, and constipated and still have celiac disease or gluten sensitivity.

Gluten sensitivity is actually an autoimmune disease that creates inflammation throughout the body, with wide-ranging effects across all organ systems including your brainheartjointsdigestive tract, and more. It can be the single cause behind many different “diseases.” To correct these diseases, you need to treat the cause–which is often gluten sensitivity–not just the symptoms.

Of course, that doesn’t mean that ALL cases of depression or autoimmune disease or any of these other problems are caused by gluten in everyone–but it is important to look for it if you have any chronic illness.

By failing to identify gluten sensitivity and celiac disease, we create needless suffering and death for millions of Americans. Health problems caused by gluten sensitivity cannot be treated with better medication. They can only be resolved by eliminating 100 percent of the gluten from your diet.

The question that remains is: Why are we so sensitive to this “staff of life,” the staple of our diet?

Gluten Intolerance Symptoms

Here is a common list of gluten intolerance symptoms. This list does not complete all documented symptoms of Gluten Sensitivity (GS).   These symptoms vary significantly from person to person, depending on the level or severity of GS and or Celiacs.  The reason why this list is not complete is that there are still other diseases and illness that are under scientific investigation.

I myself had over 15 of these symptoms prior to becoming gluten free.  Some of them I still get due to eating something that was not identified as being gluten.  This is why I always stress to read the ingredients if you are not sure.  Check out one of my safe list or make sure it has one of the GF symbols.

If you feel you have more than 5 of the below symptoms I would advise seeing your family doctor and get tested for either Celiac or Gluten Sensitivity (GS). Feel free to print this page.

I hope this gluten intolerance checklist helps you and please do not try to diagnose yourself with the list I provided for you. Always consult a professional like I did, because this is a very serious condition.

Your first GF list to starting off. Extremely useful for GF newbies.

A lot of people feel like they’ve been thrust to another planet when they first find out they have a Gluten Intolerance.  Well thats just a bunch of malarkey.  Living a GlutenFree life style is not the end of the world it’s actually living a better life.  You can live gluten-free and eat happily with many delicious GF products or common foods that you just didn’t know where Gluten Free. The thought of not eating whatever you want can be taxing, but there are so many naturally occurring products that have no gluten in them. Some of the guidelines for gluten-free cooking are:

  1. Focus only on the items in the recipe that need to be adapted. Choose a recipe with very little flour or gluten-containing items. Sometimes the flour can be omitted. (Breading or flouring meats can easily be omitted for most recipes.) Concentrate on the major flavours. Serve simple fruit and vegetables while gaining skills. Think “omit” or “substitute” while reviewing a recipe. Perhaps mark problem ingredients in a recipe.
  2. Avoid recipes that rely on convenience foods. Go back to the “from scratch” recipes the convenience food replaces. Learn to make the basic sauces and gravies often used in casseroles and soups.
  3. Look in a gluten-free cookbook for a similar recipe. Compare proportions, they are the key. Flour and other ingredients that act as thickeners are compared to the amount of liquids in the recipe. Keep proportions nearly the same for your recipe. Given the same amount of liquid, it takes less starch to thicken than flour (cornstarch vs. corn flour).
  4. Use commercial or home-made gluten-free substitutes. For example, gluten-free macaroni, bread and corn tortillas.
  5. Don’t make anything more complicated than it already is. But do take family health concerns, likes, dislikes and food dollars available into consideration.
  6. Before you begin baking, read about the unique taste and texture properties of each flour and starch alternatives
  7. a combination of gluten-free flours and starches makes a better product than single flours. A variety of gluten-free all-purpose baking flour mixes can be substituted for wheat flour and are available from many gluten-free companies.

Wheat flour substitutes

There are so many excellent substitutes for wheat flour that it is hard to know where to start. Try these first:

  1. For flouring or breading meats: Omit; or try cornmeal, potato flakes, almost any mixture of rice, bean or sorghum flours you normally use; crushed potato chips, crushed riceworks chips, gluten-free cereal or gluten-free bread crumbs. Choose a product similar to what it replaces.
  2. For gravies and sauces: Sweet rice flour or cornstarch. See product boxes for proportions of liquid or thickener and cooking instructions. Remember starches break down and get thin under high heat or long cooking times.
  3. For pudding and pie fillings: Cornstarch, potato starch, tapioca or arrowroot. Since starches get watery after a day or so, a mild flavoured gluten-free flour may be used. Look for a gluten-free flour combination with the least “gritty feel” such as sweet rice flour or a general rice flour and starch mixture.

Generic Gluten-Free Flour Mixture

Yield 6 1/3 cups

4 cups white rice flour
1 1/3 cup potato starch
1 cup tapioca flour
Sift ingredients together and store in plastic containers. Refrigerate for longer storage periods.

Gluten Free All-purpose Flour

4 cups brown rice flour
1 cup Sweet Rice Flour
1 cup Tapioca Starch Flour
1 cup Rice Polish
1 tablespoon Guar Gum

Sift ingredients together and store in plastic self-seal bags or containers. Refrigerate for longer storage periods.

 

Gluten free Baking Powder:

1/3 cup Baking Soda
2/3 cup Cream of Tartar
2/3 cup Arrowroot (or potato starch)

Mix well. Store in an airtight container.

1-teaspoon of this mixture = 1-teaspoon of regular baking power

Could colic be a precursor to celiac disease?

I always wondered if this was true.  Always hearing stories of my parents telling other friends and family members how bad I had colic as a baby.  A few of the stories were as bad as throwing me out the window… as you can see that never happened.   Those who have a colic child know the screams and cries just too well and sometimes these children like myself can have it for years as a child.  If you knew you could stop your child from hurting wouldn’t you get a blood test done.  A simple question to your family doctor by asking to test your child for celiac or (gluten intolerant) can save both you and your child a lot of heartaches for both present and future.

Take a look at Jacquelyn Askew’s hypothesis.  If individuals diagnosed with colic as infants have a high diagnoses rate for celiac disease, then doctors should recognize colic as a precursor to celiac disease and thus test for celiac disease in these infants.
