Gluten-free pizza in Ottawa: crust is only half the question

A gluten-free crust is a real option and a real convenience. But pizza kitchens run on flour, shared ovens and a single cutting wheel, so the crust is only where the questions begin.

01Why pizza is different

Most pizza kitchens stretch wheat dough by hand, dust surfaces with flour and slide pies in and out of a shared oven on the same peel. Airborne flour settles. A gluten-free base can be made perfectly and still meet a floured counter, a shared cutter or a topping bin that a server reached into a minute earlier.

The Canadian Celiac Association specifically suggests asking whether gluten-free pizza is made on a clean surface. That question is worth extending to the oven, the peel, the cutter and the toppings.

02What our records show

Two Pizza Pizza location pages in Barrhaven and Manotick list a gluten-free crust. The Barrhaven page does not say which pizzas or toppings use it, and neither page documents preparation precautions. La Dolce Vita in Little Italy publishes a separate gluten-free Italian menu that includes a pizza category. In every case, preparation details are not verified by us.

That is useful information for planning. It is not a statement that any of these kitchens can meet a celiac requirement on a given night.

03Ordering well

Ordering in person or by phone usually gives you more room to ask than an app checkout. Mention celiac disease at the start, then ask the method questions below. Simple toppings mean fewer ingredients to confirm. If a chain location tells you its crust is not intended for celiac diners, take that at face value.

Questions worth asking

Say these in your own words. The point is a specific answer about today, not a reassuring one.

  1. Is the gluten-free pizza prepared on a separate, cleaned surface?
  2. Does it bake directly on the shared oven deck, or on a tray or screen?
  3. Is a clean cutter and peel used for the gluten-free pizza?
  4. Are toppings, sauce and cheese taken from separate containers?
  5. Which current pizzas can be made on the gluten-free crust?

Frequently asked

Does a gluten-free crust mean the pizza is celiac-safe?

No. It documents an ingredient option. Shared ovens, surfaces, cutters and toppings are separate questions that only the restaurant can answer.

Why are only a few places listed?

We include a venue only when its published record has a first-party source and review date that supports a pizza-related claim. We do not infer pizza from cuisine alone.

Can I search the directory for pizza?

Yes. The directory search below is prefilled with "pizza" and matches restaurant names, cuisines and neighbourhoods.
